After 28 years of dedication to the fitness industry as Human Resources Director for a privately owned Chicago-based network of fitness clubs, I was able to take an early retirement in 2011. At the beginning of 2015, Roger and I packed up our condo, the cat, and headed to Asheville, NC to see what this next chapter has to offer!

Our family is spread around the country, so I relish the time I get to spend with them! My husband and I love to travel; and many of our trips were made on our Harley Davidson motorcycles. Now that we’re in Asheville, we are enjoying the beautiful mountains and hiking trails all around us.

I started writing Edible Musings to share my passion for creating healthy, nutrient rich and delicious recipes. I want to encourage others to adopt a more healthful approach to eating. Completing the T. Colin Campbell course on plant-based nutrition gave me a much broader perspective on the unhealthy state of our nation and the tremendous impact our food choices have on the environment. My mission is to pay forward the not-so secret health benefits of eating plant-based, delicious food!

Edible Musings provides amazing and fun recipes, informative articles and facts about real, life-sustaining nutrition and health. I also share my thoughts as I continue my own plant-based journey. I love to connect with others who are at various stages of their own quest for good health. This is a powerful way to feed your body and promote optimal health by eating whole, unprocessed, plant-based foods.
