Three Emeralds

This 3 Emeralds salad was sold in the Whole Foods deli section. They gave me a taste of it and I flipped! So, I bought about a pound, and it cost $7.25.  I also knew I could replicate this delicious dish at home. Voila!!

If you love sesame, you’ll really enjoy these creamy, umami flavors that coat the 3 beautiful crunchy green emeralds. This was real easy to make, and I love it so much, I couldn’t wait for it to sit in the refrigerator, so I began eating it immediately!

Prep time: less than 10 minutes

Makes 4 cups

Ingredients

  • 1 head broccoli, chopped into small bite-size florets
  • 1/4 lb. snow peas
  • 3 cups shelled edamame
  • 3 green onions
  • 1-2 garlic cloves, minced
  • 1 Tbls grated ginger
  • 1-2 Tbls tamari
  • 1/3 cup Tahini
  • 1 tsp crushed red pepper
  • 1 Tbls toasted sesame seeds

Instructions

  1. Steam broccoli florets just to soften, then blanche in ice water to retain green color. Set aside to let cool.
  2. Chop green onion and mix in large bowl with garlic, ginger, tamari, tahini and crushed red pepper. Whisk all until well mixed.
  3. Taste your sauce and add more of whatever you like. Or if it’s too much flavor, add a little rice vinegar or just plain water.
  4. Add the vegetables and stir to coat entirely. Sprinkle on the sesame seeds and set in refrigerator for at least one hour.
