Massaged Kale Bruschetta

These crispy small toasts are loaded with awesome flavors and textures.

Serves: 4-6
Ingredients
- 1 large baguette (egg-free), or any other whole grain bread item.
- 1 large bunch of green kale, stripped, washed and shredded into small (bite-size) pieces
- 1/2 cup really good balsamic vinegar
- 1/4 cup maple syrup
- 1 tsp. garlic powder
- 2-3 cups of cherry tomatoes, halved
- Cannellini Bean Sauce
- Option: 1/2 avocado
- Balsamic cream for drizzle
Instructions
- Preheat oven to 400 F.
- Slice the baguette or cut your other bread into hand-held size slices and place on large oven safe pan.
- When oven is hot, place bread in oven and toast for 6-8 minutes. Keep an eye on the bread as they may toast faster depending on the type of bread and the thickness of your slices.
- Make the Cannellini Bean spread (can be made ahead of time). Option: mix in 1/2 avocado for a richer spread.*
- Place washed and shredded kale in a large bowl.
- In a smaller bowl, whisk together balsamic vinegar, garlic powder and maple syrup.
- Pour the vinegar mix over the kale and begin to massage through the kale pieces. Really get in there and massage vigorously for at least 2 minutes. You’ll begin to feel the kale break down and soften. When it’s to your taste liking, stop the massage!
- Assemble your Bruschetta: line up your toast slices and spread about 2 Tbls. of bean spread on each.
- Top with massaged kale pieces to cover the toast.
- Place 2 halves of cherry tomatoes on top of kale.
- When all toasts have been covered with above ingredients, drizzle the balsamic glaze liberally over all the bruschetta toasts.
