Thai Style Lettuce Cups

This is a must-make recipe. It’s super easy, delicious, and the nutty, cauli-rice filling is so ‘meaty’. The butter lettuce cups are a perfect and pretty vessel for the vegetable filling. You’ll impress everyone when you serve a big bowl of the filling and let your friends and family build their own Asian style burrito wraps!

Cook time: 10- 15 minutes

Yield: 8 lettuce cups

Ingredients

  • 2 cups shredded Red Cabbage
  • 1 cup Green Onions, chopped for garnish
  • 1 medium sized Cauliflower (I used a pretty green broccoflower cuz’ it was on sale)
  • 2 large Carrots, roughly chopped or grated
  • 2 cups Snow Peas, roughly chopped
  • 1 large Red Pepper, roughly chopped
  • 1/2 cup Finely chopped Peanuts and Walnuts
  • 2 Tbls. toasted Sesame Seeds

Sauce

  • 3 Tbls. Peanut or Almond Butter (I used peanut butter powder)
  • 1/2 cup Tamari
  • 1/4 cup water
  • 2 Tbls. Apple Cider Vinegar
  • 2 grated garlic cloves
  • 2 Tbls. maple syrup (or honey)
  • 2 Tbls. Lime juice
  • Sprinkle of crushed red pepper flakes

Wrap

  • 2 heads butter lettuce, individual leaves carefully removed, washed and dried
  • Optional garnishes and add-ins: cilantro, pickled red onions, sweet potatoes

Instructions

  1.  Prepare sauce: In a small saucepan, whisk together all ingredients until well blended on low-medium heat. Turn off heat and set aside.
  2. Cut small cauliflower florets from stalk, and place florets in food processor. Pulse until cauliflower turns into ‘rice’. Be careful not to over process.
  3. Prepare filling: In a large shallow pan over medium heat, combine carrots, snow peas and red pepper. Cover with 1/2 the peanut sauce and bring to a simmer, then cover and allow the vegetables to cook until slightly tender, about 8 minutes.
  4. Add the riced cauliflower and chopped walnut and peanut pieces to the cooked vegetables, and stir well.
  5. Let the mixture sit for 5 minutes, then scoop into butter lettuce leaves and top with cilantro, chopped green onions and optional red pepper flakes, if you’d like. Serve immediately with the remaining sauce. These soft lettuce cups can be folded and eaten like a wrap!
