White Wine Cashew Cream Sauce

This stuff is so good, you’ll want to spoon it up! This is a versatile cream sauce and is the kicker in the Penne Pasta with Mushroom recipe.

Total time: 5 minutes


½ cup soaked cashews

¼ cup pine nuts (optional)

½ cup dry white wine (optional, but c’mon)

2 Tbls. nutritional yeast

½ tsp. Italian seasoning

Pinch black pepper


  1. Put all this goodness in your high-speed blender and let ‘er rip! You may need to scrape down the sides of the blender a few times and add splashes of water or wine, if necessary to get a really creamy consistency. It may take 2-4 minutes. Cover and set in fridge until ready to use.

Recipe Notes: If you don’t want to use the white wine, at least throw a splash of white wine vinegar in there!
