CLASSIC GREEK SALAD DRESSING
No oil necessary, just terrific, authentic flavors. Updated to appeal to the smarter palate!

Makes 1 cup
Ingredients
- 2 small garlic cloves, minced
- 1 teaspoon dijon mustard
- 2 teaspoons dried oregano
- 3 Tbls. apple cider vinegar
- 2 Tbls. red wine vinegar
- juice of 1/2 lemon
- 2 Tbls. tahini
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Combine all of the ingredients in a glass jar, and whisk together until emulsified. (Glass mason jars are great for this purpose, so you can just screw on the lid and shake til it’s all combined!) Like most dressings, the flavor gets richer as the ingredients hang out together, so you may want to wait at least 30 minutes before serving over your favorite salad or roasted potatoes.
