Apple chunks in the banana bread! I’m always happy to find a recipe that actually works and doesn’t use oil or excessive amounts of refined sugar. This one had promise, so I made it two ways and it was a success both times. Either way, it’s a super easy recipe and really delicious. A great breakfast treat, and a welcome hostess gift!

Prep time: less than 10 minutes

Cook time: 30-45 minutes (depending on the size of the loaf pan)

Ingredients

  • 2 ripe bananas
  • 1 apple, peeled and diced
  • 1/4 cup Sucanat (or sugar)
  • 1- 3/4 cups GF all purpose baking flour
  • 1/4 cup applesauce
  • 1/4 cup apple butter
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 tablespoon chopped walnuts (optional)
Second Recipe
  • 1 ripe banana
  • 1 apple, peeled and diced (this one was a bit larger)
  • 1- 3/4 cups GF all purpose baking flour
  • 1/2 cup applesauce
  • 1/2 cup date paste
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 tablespoon chopped pecans (walnuts are good, too but nuts are optional)

Instructions

  1. Preheat oven to 350°F. Lightly spray a 9-inch loaf pan.
  2. In a medium-sized bowl, mash the bananas with a fork.
  3. Add the diced apple, sugar, flour, applesauce and apple butter, baking soda, salt, and cinnamon to the bowl, and mix well. Pour into greased pan, and sprinkle with chopped walnuts (or pecans)
  4. Bake for 40 to 50 minutes or until a toothpick inserted in the middle comes out dry.
  5. Cool in pan for 15 minutes, and then transfer to a cooling rack. Enjoy!
