Apple Upside Down Cake
It’s Fall. It’s all about apples. Find the ones that you love to cook with and make this cake….NOW! I used an apple called Mutsu, but Fuji, Rome and Jonathons work well. First of all, it’s pretty easy to put this recipe together, it’s fun to make, and it’s so delicious. Heat a slice for breakfast, take one with you for a mid-morning snack, or just bring this beauty out to impress your guests!

Cook time: 50 minutes

Makes one 8-10 inch round cake

Ingredients

Apple Layer:

  • 2 medium sized baking apples: cleaned, peeled, cored and sliced
  • 2-3 Tbls. organic brown sugar
  • ¼ tsp. cinnamon
  • ¼ tsp. nutmeg
  • 2 Tbls. fresh lemon juice

Dry Stuff:

  • a pinch of salt
  • ¾ cup unrefined cane sugar or powdered sugar
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • ½ cup all purpose flour
  • 1 cup whole wheat flour

Wet Stuff:

  • 1 tsp. fresh lemon juice
  • 1/4 cup unsweetened applesauce
  • 1 cup water
  • ½ tsp. vanilla extract

Instructions

    1. Line a 8 or 10″ round cake pan or tin with parchment, or use a springform pan.
    2. Lay the apple slices in a fan shape on the bottom of the pan in two layers.
    3. Sprinkle the other ingredients on the apples and set aside.
    4. Preheat your oven to 350 F.
    5. Combine all the dry ingredients in a large bowl.
    6. Add the water, applesauce and vanilla extract, and stir to remove all lumps.
    7. Add the lemon juice and stir well again.
    8. Pour the batter in the cake pan layered with the apple slices.
    9. Bake 45 minutes, testing with toothpick after 40 minutes.
