BLACK BEAN BROWNIES

These brownies are a great alternative to traditional brownies! It’s amazing how they taste like chocolate and fudge and I dare anyone to taste beans!

Makes 16-20 pieces, depending on how big you cut them

Cook time: 30 min

Ingredients

  • 15 ounces no-salt black beans, drained and rinsed
  • 2 whole and ripe bananas
  • ⅓ cup agave nectar
  • ¼ cup unsweetened cocoa
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • ¼ cup raw sugar(optional)
  • ½ cup non-dairy chocolate chips (optional, but I wouldn’t recommend omitting)
  • ½ cup chopped walnuts (optional)
  • ¼ cup instant oats or oat flour (you can make your own oat flour by running the oats through food processer first)
  • If you prefer a more cake-like brownie, add another ¼ cup of oats or oat flour.

Instructions

  1. Preheat oven to 350 F.
  2. Using oil spray, coat an 8×8″ pan.
  3. Combine all ingredients, except oats, in a food processor or blender and blend until smooth, scraping sides as needed.
  4. Stir in the oats until blended well.  Fold in chocolate chips and nuts, and pour batter into the pan.
  5. Bake approximately 30-35 minutes or until a toothpick comes out clean from the center of the pan.

It’ll be hard, but you have to let them cool before slicing. Share or not, but enjoy!
