FRUIT PIZZA

Not that you need instructions to make this fun fruit pizza, but here’s what I included, and you can get as creative as you want by adding other favorite fruits!

Makes: 6-10 slices

Total time: 10-15 minutes

Ingredients

  • 1/2 seedless watermelon
  • 1/4 cup blueberries
  • 4-5 strawberries
  • 1 ripe, soft mango
  • 2 kiwi
  • 1/2 cup unsweetened shredded coconut

Instructions

  1. Cut 2, 1/2″ thick ‘wheels’ from the watermelon, then into slices like pizza.
  2. Wash and cut blueberries in half, carefully.
  3. Wash and thinly slice strawberries.
  4. Peel the mango and cut 15-20 thin slices about 2″ each.
  5. Peel and slice 1/4″ wheels of the kiwi
  6. Arrange your watermelon pizza slices on a big round platter.
  7. Place your cut fruit on top so it resembles a pizza with toppings.
  8. Sprinkle on the coconut and refrigerate until ready to serve.
  9. Watch the amazement on their faces!
